9,2 kg of flour T.65
800 g of Phil Campasine®
200 g of salt
80 g of yeast
7 l of water
Caution, hydration evolves in accordance with flour type used.
PROCESS (1)
Base T° of 64°C
Kneading :
First speed for 3-4 min
Autolysis for 30 min
First speed for 1-2 min
Second speed : Oblique 4 + 5 min / Spirale 2 + 3 min Dough
T° of 25-26°C
Resting time of 1h30
Scaling of 330 g with hydraulic divisor
Shaping : roll only on Phil Fleurage Campasine
Proofing for 45-60 min at 24-25°C
Baking for 23 min at 260-240°C

The Phil Campasine is a subtle association of Camp Rémy wheat and the strong character of Buckwheat.
The originality of this flavour is due to the unusual combination of Camp Rémy wheat and Buckwheat and the possibility of varying the doses in order to adjust the character and colour of the bread. According the dose used, Phil Campasine can be made into a ‘normal’ bread with a wonderful taste, a country style bread with an incomparable taste or a special character bread. The colour can vary from light to quite dark according to the doses used.
